Save My Stomach

I am in this spectacular rut where, every morning at approximately 7:30, I stand in my kitchen and stare blankly into my refrigerator.

What’s for lunch?

I have no ideas. No inspiration. All I am capable of is looking into my refrigerator and turning up my nose at every option inside.

I am so over it.

Here is what I like: something I can put together the night before, something I can make in big batches and eat all week, something reasonably healthy, something other than a can of soup or a frozen meal and something that will fill me up.

If you have any tasty alternatives to pouting into the refrigerator for 10 minutes and then rushing to grab something that isn’t really all that appetizing, I’m all ears.

Seasoned grilled Chicken, whole wheat penne, tossed with pesto.

easy to make in big batches, it'll hold up all week, and it reheats well. Pair it with your choice of greens or green beans, or other vegetable side. It'll make a nice healthy dinner, or lunch any day of the week.

I'm all about making big batches of stuff for sandwiches, chicken salad, egg salad, etc... I always pair a sandwich with carrot sticks or other raw veggies and fruit. I'm also big on taking dinner leftovers for lunch, lasagna always lasts forever.

it wont last for a whole week but roasted veggies are yummy, make a big batch and then you can mix them with orzo/pasta and chicken (which you can also cook ahead) or slice them up and put them on a sandwich with some goat cheese...mmmm. i also make a homemade mango salsa, and then cook a big piece of salmon. salmon will last for a few days and is great cold with the mango salsa

I make this dish in my crockpot and it lasts all week in the fridge:

3 big chicken breasts
big huge jar of salsa
2 cans black beans
1 smallish bag frozen corn
Garlic, salt & pepper to taste

Cook all day on medium, shred the chicken, serve with light sour cream and baked tortilla chips. Sometimes I also wrap it up in a whole wheat tortilla. PERFECT!! Cheap, healthy, and easy!
